Famous Jamaican Jerk

Have you ever had Jamaican jerk chicken or pork? If you haven’t, you are truly missing out on something amazing. Our chef gets more requests for a traditional jerk style dinner than any other dinner request. Jerk recipes originated in Jamaica, and now they are world-famous, a testament to how good it really is.

The History of Jerk

Jerk cooking uses a series of spices as a marinade or a paste to season chicken or pork. People also use jerk seasoning on beef, goat, fish, fruit or vegetables. Traditionally the marinade has allspice and scotch bonnet peppers (habanero), and the meat is marinated for hours and slow cooked over pimento wood.

Most historians believe that the word jerk actually comes from Charqui, which is a word from Peru. Charqui meant dried strips of meat. We call it jerky in North America. However, Jamaican jerk cuisine is not dry in this same way, people in Jamaica marinade and slowly cook the meat for a tender and flavourful result. It is this combination of flavours and cooking that gives jerk cooking its signature style.

We get asked all of the time by guests, “what is your favourite traditional Jamaican recipe?”, and our answer is always Jerk Chicken with Fried Plantain. It is a long time staff pick and we love to cook it for our guests, but today we are sharing it with you.

Our Staff Favourite: Jerk Chicken and Fried Plantain Recipe

Ingredients

8 to 10 piece of chicken legs and thighs
1 fresh lime
Salt and pepper to taste
1/2 tablespoon cinnamon
1 sprig of fresh thyme
3 medium (green onions), chopped
1 medium onion, chopped coarsely
2 to 4 Habanero peppers, chopped - mild use 2, hotter use 4
1 1/2 tablespoon soy sauce
1 tablespoon chicken bouillon powder
3 tablespoons dark brown sugar
6 garlic cloves, chopped fine
1 teaspoon freshly ground or grated nutmeg
1 tablespoon Allspice, coarsely ground
1 1/2 tablespoon fresh ginger chopped
1 tablespoon coarse ground black pepper
1/4 - 1/2 cup pineapple juice

Instructions

1. Trim chicken of any excess fat. Make sure the chicken is dry. Rub the chicken with lime, salt and pepper.

2. Combine the following in a processor or a blender: cinnamon, thyme, green onions, onion, habanero pepper, soy sauce, bouillon, brown sugar, garlic, nutmeg. Allspice, fresh ginger, ground pepper and pineapple juice. Pulse for about 30 seconds until blended.

3. Drench the chicken with jerk marinade. Place in a zip lock bag and refrigerate overnight. If you can't refrigerate overnight, it needs to marinate at least three hours. Don't touch the jerk blend with your hands. It is very spicy and hot. Wear gloves if possible.

4. When grilling, take the chicken from the marinade and place on a medium grill. Put the marinade aside. In a sauce pan, bring the marinade to a simmer. Use some of the marinade to cook with slices of plantain for about 5 minutes. The remaining marinade can be used as a dipping sauce.

With the holiday season already upon us making the end of 2019, we wanted to take a minute to thank all of our guests for their patronage this year. We met many amazing new guests that we now can call friends, and were delightfully reunited with some of our favourite returning guests.

Our Year in Review

We just have to take a moment to tell you about the wonderful people we have come into contact with this year. One of our favourite new guests was an extended family from New York, who rented our entire villa for a family reunion. Three generations of family members got together for a week, and they really had a blast. Our chef even whipped up an amazing chocolate cake for a birthday, so everyone could celebrate together. This family was so gracious, so polite and thankful, we were sad to see them go, however, we are so excited that they will be coming back to stay with us again in 2020 because they had such a good time.

We were also lucky enough to welcome one of our longest guests back this year. These two sisters have been with us for years, and our chef always makes a special rum pineapple cake for them. They laughed and joked around while they relaxed and read by the pool every afternoon, with their large sun hats and sunshades on. These guests make our days so much brighter.

Our lovely villa has seen its share of laughter and tears this year. We’ve had engagements, weddings, birthdays, and every kind of celebration in between, all while families and friends are bonding and growing stronger during their stay with us, we are truly honoured. We know that next year will bring us even more excitement and great adventures.

As our 2019 year draws to a close, we wanted to take a moment to thank you again for your goodwill, good wishes and the good fun you gave us all at Villa Rosa during the year. We can’t wait to see many of your beautiful, smiling faces in 2020.

We have your exclusive, private tour of the main floor right here... take a minute to sit down, relax, and let yourself be captured by the fresh Caribbean evening breeze flowing through the open concept space.

From the moment you step through the doors, you are captured by the beauty of the intimate lounge area. The beautifully appointed teak bar gives you the opportunity to grab a drink before choosing where to sit. It is a difficult decision. Should you sit inside, on the comfortable chairs and couches? Or should you sit outside, where the floor to ceiling doors open onto the patio?

The view of the ocean is magnificent wherever you sit. Picture yourself eating breakfast out on the expansive patio while soaking in the view every morning. The white walls contrast beautifully with the blue of the ocean and the greenery, as if it were a painting. As you continue deeper into the house, you notice how expansive the patio really is encompassing the 40’ x 20’ heated pool, which invites you to take a dip.

As you continue to walk the patio, you are led into the first bedroom, with glorious high ceilings and cool white furnishings. Within the bedroom suite, a bathroom beckons, with a tub you could spend hours soaking in, as well as a luxurious rain shower.

World Famous Jamaican Rum

When you think of Jamaica, what is the first thing that comes to mind? For many, the answer is “rum”. While the term “rum” was first used to describe a liquor made from sugarcane juice in the 1600s, the origin of the word itself is unknown. Rum is a versatile spirit and can be served alone or as a cocktail. No matter how you like it, this drink is rich in flavour as well as history.

Jamaican Rum

Appleton Estate in Jamaica is one of the oldest rum producers in the Caribbean and the world. In fact, Jamaica often traded rum with other countries in the 17th century. While at first the alcoholic beverage was harsh to drink and could result in an unpleasant experience, processing techniques were perfected and refined that made the drink more palatable and secured its place as one of the most popular alcoholic drinks in the world. Jamaica produces the widest varieties of rum compared to anywhere else in the world and Jamaican rum brands are sold in over 70 countries worldwide.

The Taste You Won't Forget

Rum is made from molasses, the syrup that is produced from boiling and crystallizing sugar cane juice. It is then fermented and distilled. This process makes a clear, colourless liquid consisting of about 80% alcohol. However each different type of rum is made a bit differently.

The longer rum is aged, the more complexity of taste it will have. White rums are fresh and fruity while the darker rum’s taste is determined from the casks or barrels in which they are aged, this is where it picks up the oaky flavours that make them so popular.

Now that you know the history of Caribbean rum, it’s time to try some! This Montego Bay Sunset cocktail(one of our favourites) will brighten your day and help you relax. Made with real Jamaican rum, this drink is the perfect end to an already perfect day.

Must Try Recipe: Montego Bay Sunset

What you’ll need:

1 Glass (We recommend a double old-fashioned glass, but you can use anything!)
3/4 oz Appleton Estate 12 Year Rare Blend rum
3/4 oz Manzanilla sherry
1/2 oz Fresh lemon juice
Ginger simple syrup
Ice
Lemon wedge or peel

Instructions: Add the Appleton Estate 12 Year Rare Blend rum, Manzanilla sherry, lemon juice, and ginger simple syrup into a shaker with ice and shake. Strain over a large ice cube into glass. Garnish with lemon wedge or peel, and sit back and enjoy.

History: Good Hope began in 1774 as a sugar estate and grew into a village to support the workers after emancipation. In the 18th century, the Good Hope Estate belonged to John Tharpe, then the largest land and slave owner in Jamaica. In addition, Tharpe owned much of the prime waterfront property in Falmouth, and his townhouse, now the Falmouth branch of the government tax office, is still one of the most elegant structures in the town. The small village has some of the best examples of Georgian architecture in the island, and the churchyard has many old and interesting tombstones. The David Pinto Pottery Studio: Many regard David Pinto, master potter, as one of Jamaica’s most promising young artists. His work, which has been displayed in the exhibitions of some of the most prestigious galleries around the world, is dynamic and refreshingly inventive. It is reflective of his warm and affable personality. Back in Jamaica after living and working abroad for a number of years, Pinto has established his studio inside one of the former plantation buildings on the Good Hope Estate, where he creates his pieces and occasionally hosts international workshops.

A breadfruit that is almost ripe – ‘turn’- tastes sweet. It can be prepared in a number of ways, but the most popular methods are roasting, boiling, frying and baking. STEA has a mission to have a long-term environmental and community development impact in South Trelawny and its environment through discrete, integrated project such as;

- Promoting the conservation and protection of Cockpit Country and Trelawny’s natural and built environment.

- Developing community heritage and eco-tourism in Trelawny by highlighting cultural traditions, historic artifacts and the biodiversity of Cockpit Country.

- Pursuing the development and production of commercially viable value added by-products from yam and other local raw materials.

- Developing and expand attractions like Trelawny Yam Festival to showcase the parish, increase visitors and boost economic opportunities for local residents.

- Developing partnerships with government, the private sector, civic organizations, grant funders and financial institutions in order to access and combine human resources, technical expertise, physical facilities and finances in order to implement projects efficiently and effectively.

In order to achieve these goals STEA runs Cockpit Country Adventure Tours , a licensed tour company that offer unique and exciting outdoor adventures for all ages and experience levels such as hiking, caving, trails, sightseeing, historical tours and more.
